Quick Easy Salsa Criolla

Salsa Criolla

Salsa criolla is like a quick-pickled topping, made from red onion, cilantro, fresh chili, and lime juice. It's a staple in Peruvian cuisine, but it really deserves more love. Tangy, crunchy, and fresh, put it on top of anything to give it some new flavor. The traditional chili is the aji amarillo, but if you can't find those, a jalapeño or other chili of your choice will work. 

If you don't want to use lime juice, you can also use vinegar. White vinegar, apple cider, and rice vinegar all work fine. 

Ingredients:

1/2 thinly sliced red onion
1/4 cup chopped cilantro
1/2 cup fresh squeezed lime juice OR 1/2 cup vinegar
1 tablespoon chopped fresh chili
salt to taste

Steps:

Combine all ingredients into a bowl, give it a good stir. A reusable container works great if you plan to keep it for a few days. Put it in the fridge for at least 30 minutes to let the flavors meld. Will be good for a week in the fridge covered.
